Business dinner, with Asian guests.
The raw appetizer was just okay; Unfortunately, I don't have to rate the mixed fried seafood in the same way. Here too many legs, too much "chitin", too much waste.
Even my colleague, just outside the restaurant, politely reproached me for my choice of restaurant which, nevertheless, enjoys an excellent reputation.
Excellent service, environment as well. Even the final bill, in fact... and alas... it really excelled...

RESPONSE TO... OWNER'S RESPONSE:
I have read your reply with interest, but the system no longer allows me to speak to it, except possibly by re-editing my original review via the following posthumous addition dated 30 November 2023.
Dear, when I talk about "chitin" I mean that organic, stringy, leathery and indigestible substance which makes up the SHELL of the prawns, certainly not the spines of the little fish which I believe are cartilaginous, or so, and which therefore were not not an unexpected element at all, nor particularly disturbing for anyone who knows the anatomy of a fried fish.
They were the "skin" of the prawns" those... things that I piled up on the plate without you - evidently - realizing it and which you didn't comment on at all when taking it away. Microscopic prawns, all shell breaded and fried, greasy, all little legs with little or no pulp: sorry if I find this chitin indigestible (which some also claim strengthens the hair) and therefore I prefer to discard it immediately, as soon as I feel it crunching under my teeth. Maybe with everything else, if ever one surgical dissection on a micro-shrimp would involve more effort than pleasure.
That we then left the restaurant with a smile on our faces (also so as not to upset our Chinese guests), perhaps saying hello and thanking them for the excellent SERVICE received at the table (see my 4 stars above, on SERVICE), I find it strange that ...you find it strange! It's simply called "good manners."
Do you know what? I find it truly disgraceful that here they intend to pass off our education as... hypocrisy! You could have avoided this.

Not value for money
We had dinner on the 21st taking 2 tasting menus with two pasta dishes, two main courses and two desserts. Excellent food, with particular flavor, however I would have liked a greater boost in tastes for some dishes such as the warmer tortellini and the frying with a little more salt (but these are personal tastes). Really good and tasty half sleeves and red mullet. As for the dessert, the babà was really good, congratulations!
To conclude on a positive note about the service, both the owner and the waitresses were really kind
I had dinner here on an evening dedicated to wine tasting. The dishes are quite innovative and the chef proves to be very open to experimentation. Appealing appetizers including a Jerusalem artichoke sauce. Very tasty risotto, in my opinion too full of flavours. Donkey cooked at low temperature with really stringy meat. very good desserts except the cannoli with goat's ricotta which covers all the flavours. the quality-price ratio in my opinion is a bit high.
